He is a Professor in the Department of Food Sciences and Technology, Ohio State University, USA. He received his PhD in Food Science in 1990 from Michigan State University, East Lansing, Michigan. He holds a M.S. degree in Food Science from Michigan State University, East Lansing, Michigan in the 1981, followed by a B.S. degree in Biochemical Engineering from National Polytechnic Institute, Mexico City, Mexico.in the 1974. Professor Alvarez's contribution to the Food Innovation Center will be in three areas. First, in food production safety, he has developed environmental and food risk assessment programs for food plant operations and implemented training courses in food safety, good manufacturing practices (GMPs), and Hazard Analysis and Critical Control Point (HACCP) for plant management personnel. Second, he conducts applied research related to pilot plant-level production and scale-up of health promoting foods. Third, he will promote food safety internationally, particularly throughout Latin America where I have collaborations in seven countries. This new center will enhance the already successful, self-supported, fee-based programs of the Food Industries Center for the food industry, entrepreneurs, and related institutions.
His areas of expertise is probiotics in dairy food products, food plant audits, new product development, HACCP training.
