Chemical contaminants, including pesticide residues, heavy metals, mycotoxins, and food processing contaminants, continue to challenge global food safety. This presentation discusses current analytical methods used to detect chemical hazards and evaluates recent advances in exposure assessment and toxicological risk evaluation. The importance of monitoring contaminants throughout the food production chain will be emphasized.
The session will also highlight innovative laboratory techniques, international regulatory frameworks, and preventive strategies that reduce consumer exposure to hazardous substances. Future developments in food toxicology and risk assessment for ensuring safer food systems will be explored.
Furthermore, the presentation will address the importance of continuous monitoring programs, international collaboration, and scientific innovation in minimizing chemical hazards within the food chain. Emerging analytical technologies and future research priorities for ensuring consumer safety will also be discussed.
Dr. Sofia Martinez is a Senior Research Scientist at the Center for Food Toxicology and Risk Analysis, Spain. Her research interests include food toxicology, chemical risk assessment, analytical chemistry, food contaminants, and consumer health protection. She has participated in several international research projects focused on improving food safety standards.
