Dr. Zhao did BS in Food Engineering (1991), MS and PhD in Agricultural product storage and Processing, Southwest Agricultural University, China. Presently, He is a professor in Food Chemistry and Nutrition and the Dean of College of Food Science, Southwest University, China.
Chemistry and Nutrition of non-digestible carbohydrates, with emphasis on extraction, structural characterization, modification, biological activity evaluation, related product design and industrialization of bioactive polysaccharides, resistant starch, dietary fiber and oligosaccharide. A small part of work on rapid analysis techniques for food quality and safety.
