Biography

Mr. Fatih Ortakci is a PhD student carrying a 4.00 GPA in the Department of Nutrition and Food Sciences at Utah State University, Logan. Received his B.S. and M.S degree from Ataturk University where he worked as a graduate research assistant for 3 years. After completing M.S degree at Ataturk University Mr. Ortakci decided that it is time for a change of scenery (and weather) and moved to snowy Logan, where he was accepted as a PhD student at Utah State University. He is a member of American Society for Microbiology and American Dairy Science Association. He frequently was asked to review manuscripts regarding microencapsulation of probiotics from several academic journals. He was awarded to USU College of Agricultural Scholarship twice during first couple of years of his PhD. Research interest focuses on Microencapsulation of Probiotics, and Microbiology of Dairy Foods. Currently working on a project that causes slit defects in aged Cheddar cheeses by adventitious non‐starter lactic acid bacteria. Planning to graduate by the end of 2014 and continue to serve in the academics area. He currently resides in Logan with his wife Nermin and their son Kayra.
