Dr. LIU Shao Quan is Associate Professor at the Food Science and Technology Programme, Department of Chemistry, National University of Singapore, Singapore. He received his B.S. 1985, from South China Agricultural University, Guangzhou, China. Dr LIU Shao Quan received his; M.S. 1990, from Massey University, New Zealand and Ph.D. 1994, from Massey University, New Zealand. He was a post-doctoral fellow, from New Zealand Dairy Research Institute. Dr. LIU Shao Quan has served on many review panels, has reviewed for many journals. Dr. LIU Shao Quan has many peer reviewed publications and is funded by several foundations. Dr. LIU Shao Quan interests include generation of natural flavours via fermentation and biocatalysis, Characterization of flavour of Asian fermented foods and beverage, Development of functional foods and beverages, Bioprotection of foods and beverage, Fermentation of milk, soy, fruits and vegetables.
