The present invention relates to a method of separating betanin from red quinoa by supercritical fluid fractionation, including: mixing an extract of red quinoa with an ethanol/water mixture to obtain a mixture of red quinoa/ethanol/water; and separating betanin from the mixture of red quinoa/ethanol/water by supercritical fluid fractionation
