Determination of the glycemic index values of the Turkey-specific ice cream

Abstract :

The Glycemic Index (GI) is defined as the effect of consumed food on blood glucose relative to the reference food. The aim of this study is to determine the GI value of �??Atatürk Orman �?iftli�?i(AO�?)�?� ice cream, which is unique to our country. This study included 18 adult healthy individuals with normal body mass index (BMI) values (18.5-24.9 kg / m²) (Female/ Male: 10/8). Individuals participating in the study were also invited to the Ankara University Faculty of Medicine Endocrinology and Metabolic Diseases Outpatient Clinic on different days for two weeks to consume 2 test foods (glucose) and 2 reference foods (AO�? ice cream) after 12 hours fasting. Venous blood samples were taken at 0, 15, 30, 45, 60, 90 and 120 minutes after consumption of reference and test foods and glucose values were recorded. The glycemic index value of the test food was calculated by multiplying by 100 the ratio of the sum of the area under the curve obtained from the test food to the sum of the area under the curve obtained from the reference food. The median values of the area under the curve of the reference food and the test food were 2360.88 (483.75- 4132.5) and 475.95 (44.88-1980), respectively (p <0.001). The Glycemic index value of the test foods was 21.46 (4.08-409.3) according to the reference food. In the classification of the Food and Agriculture Organization of United Nations (FAO), foods are divided into three groups according to their GI values (>70 high, 55-70 moderate, <55 low). In this study, the glycemic index value of the Turkey-specific �??Atatürk Orman �?iftli�?i ice cream�?? was found to be 21,4 (4.08-409.3) (Low).

Biography :

Prof. Dr. Rıfat Emral was born in Zonguldak, a city near Black Sea in Turkey, in 1968. He finished his primary and secondary schools in Zonguldak as well. Afterwards he attended medical faculty in İstanbul in 1987. He graduated from İstanbul University, Faculty of Medicine in 1993 and he became a medical doctor. From 1993 to 1997, he worked as asistant at the Department of Internal Medicine at Istanbul Medical Faculty. He finished his thesis entitled ‘Comparison of treatment with only diet and medical approaches in hypertriglyceridemai in1997, and he became an internist. He began his fellowship in the area of endocrinology and metabolism at Ankara University, Faculty of Medicine in 1998. In 2001, he became a specialist in endocrinology and metabolic diseases with his study entitled ‘Thyroid consequences of Chernobyl Nuclear Power Station accident in Turkish population’. This study was published in European Journal of Endocrinology later. He went on working at the university hospital since then and became an associated professour in 2004. He got his professour degree in 2010. He is still working at Ankara University, Faculty of Medicine, Department of Endocrinology and Metabolic Diseases. Prof. Dr. Rıfat Emral is the member of the Society of Endocrinology and Metabolism of Turkey, and Society of Advocating Researchs in Endocrinology and Metabolic Diseases. He has also been a consultant in Turkish Medicine Agency since 2011. He is also a member and vice chairman of Ankara Diabetes Association. His primary area of interests are diabetes mellitus, adrenal and gonadal diseases. He was the primary responsible researcher of IO HAT study in Turkey. Prof. Dr. Rıfat Emral is married with two sons.
